Sfakianopites. Sour cheese pies from Chania

Sfakianopites or pies from Sfakia! Very popular pies in Crete not only for their flavor but also for their ease of preparation of the. It is found almost everywhere in Sfakia, all over the prefecture of Chania, and not only.

Try it and you will never forget!

Ingredients for 10 pies Preparation
 

1/2 kg of flour

1 cup of water

1 glass of raki
(it makes a fluffy and fragrant dough)

2 cups of olive oil

2 teaspoons of salt

10 large spoonfuls of xinomizithra

Knead all the ingredients -apart from the cheese- into a soft dough.

Cover  it for 30 minutes to let the dough to “rest”.

Knead the cheese into small balls at the size of a walnut.

Roll the dough into a thick sheet.

Cut it in round pieces with the help of a small plate.

Put the cheese in the center, form the sheet into a pouch and close it well on top.

Push it gently with your hand to flatten a little bit and use the rolling pin give them the shape of a small dish.

Grease the pan with a little bit of olive oil, heat and we put the pie inside.

Turn it by flicking sharply the pan in the air-or with the help of a fork in the pan-

let them brown a bit and … ready!

 

 

Some advice:

Important: xinomyzithra must be very well drained, otherwise it will pierce the pastry sheet during baking.

They are magnificent just as they are but also with Cretan honey added on top!
Excellent meze for raki!
