“Kalitsounia” The sweet cheese pies of Easter.

“Kalitsounia” are the beloved sweet cheese pies, usually prepared after church on Holy Thursday in Crete at the time of Easter. There are dozens of different ways of preparing them from one to the other end of the island.

Ingredients Preparation
For the dough:

1 kg flour

2 eggs

2 tablespoons sugar

1 tablespoon salt

200 g of strained yoghurt or 1 cup of milk

1 cup of olive oil

1/2 cup of raki

for the filling:

1.5 kg sweet mizithra

2 eggs

3 tablespoons sugar
(Depending on your liking)

1 teaspoon of cinnamon

chopped spearmint or mint

 

 

Knead the ingredients into soft dough.

Pour some flour on top, cover it and let it rest for half an hour.

Roll the dough into thin sheets and cut it in round pieces with the help of a small dish.

Add all the ingredients for the filling in a bowl
and mix well until they become a relatively homogeneous mixture.

Put about a tablespoon of filling at the edge of each round piece of pastry.

Fold carefully to unite the edges and press them with a fork to unite them.

Place the “kallitsounia” on a oiled baking pan, brush them with egg and sprinkle them with sesame

Preheat your oven and bake them at 180°C for about 20 minutes until they get a golden brown color.
