“Kalitsounia” are the beloved sweet cheese pies, usually prepared after church on Holy Thursday in Crete at the time of Easter. There are dozens of different ways of preparing them from one to the other end of the island.

Knead the ingredients into soft dough.
Pour some flour on top, cover it and let it rest for half an hour. Roll the dough into thin sheets and cut it in round pieces with the help of a small dish.
