Lentils with orange peel. This “humble” food, apart from very tasty, is one of the oldest foods of humanity and has beneficial properties for our health! Protects from coronary and cardiovascular diseases, rich in fibers, and 500 grams of lentils contain more proteins than 500 grams of beef! They are very popular for their high iron content, while containing only few calories! So lentils are a real treasure and we must establish them in our diet.
1/2 kg of lentils
1/2 kg of ripe tomatoes
2-3 cloves of garlic
1/2 cup of olive oil
2-3 bay leaves
dried orange peel (optional)
Boil the lentils for 10 minutes.
Grate the tomatoes, add oregano, salt and pepper.
Slice the onion and garlic thinly.
After the 10 minute boil, drain the lentils, heat the oil and saute the onion.
Add the lentils, stir them well to become oily and pour water util it covers them.
Add the garlic and the bay leaves and boil for 20 minutes (add hot water if necessary)
Add the tomato and the orange peel.
I pour 2-3 tablespoons of vinegar in the end, everyone can add more on their plates if they want.
